《Imposter Kitchen》 speculates on the network of interests and the heterogeneity surrounding the phenomenon of aging within the format of a fine-dining restaurant with an open kitchen. At each table sit different constituencies—patient caretakers, researchers and engineers, entrepreneurs and investors, animal-rights activists, and more. Meanwhile, the kitchen stages a quasi-surgical procedure for steak aging as a spectacle.

Moving between the kitchen and tables, visitors perform the role of course runners, delivering steak dishes prepared with different aging techniques. In the process, one party’s stake (equity/interest) can be transferred or mediated to another stakeholder. Through this audience performativity, the work explores how seemingly conflicting interests can be reconnected and brought into forms of contemporary coexistence.
